Ribocoat

Ribocoat EC-N is a coated calcium 5'-ribonucleotide and Ribocoat ES-N is a coated disodium 5'-ribonucleotide.
Phosphatase, which exists in fresh ingredients e.g. meat and wheat flour, dissolves ribonucleotide when uncooked.
Ribocoat EC-N and ES-N protect themselves from active phosphatase.
When ingredients are heated, phosphatase is inactivated, coating of Ribocoat melts and ribonucleotide spreads into the ingredients.
This product is used for flavour enhancement in such food as processed meat, fish ball, dim sum, and batter.
